Edible Canada and the Outlet Collection at Niagara hosted ‘The Canadian Table’, Canada’s first-ever fire-grilling festival, which was held over the course of three days from August 16-18, 2019 at Outlet Collection at Niagara-on-The-Lake, ON. The inaugural event, which focused solely on sustainable ocean-wise seafood and plant-based dishes, brought Canada’s top live-fire chefs and five of the best bar stars together, for an evening that included flaming grills, amazing dishes, local wine, beer, cider and cocktails, as well as live music and great conversation.
Saint Lucia’s very own award-winning Chef, Victoria Alexander, proprietor and personality behind the brand ‘Ti Kay La Foods’ in Canada, was one of the featured chefs and a favorite at the event. She wowed the crowd with two authentic tapas-sized dishes. Her first dish, charred tofu steak in a spicy maple-ginger sauce, was served on a bed of squash-cauliflower and green peas risotto, topped with microgreens salad & roasted black garlic-avocado-lime dressing. Her second dish, which earned her the gold medal, was cast iron smoked halibut with Caribbean sweet potato & butternut squash mash, topped with pineapple & papaya salsa, drizzled with lemon butter sauce.
The event, which was dubbed ‘Summer’s ultimate outdoor food party’ was undeniably a pescatarian’s dream and appealed to those looking for healthier and more sustainable food options.
